Simple Lunch: Lemon Flounder w/ Coconut-Cilantro Rice

Rice cooker (Click):

Rice (4 cups)
Coconut milk (13.5oz can) + water to “4 cup” line
S&P to taste

Cook on regular cycle

Stir in 2 TB minced fresh cilantro

Pan Sear :
Flounder fillets ($5 / 8 pack frozen via Bottom Dollar)
S&P to taste

Garnish & Serve:

Place fish on top of rice
Serve with lemon wedge and additional cilantro

…because mommies need to eat lunch, too.
